“Æbleskiver” is a small Danish delicatessen baked in a special pan. It's made of a dough similar to pancake dough but the “Æbleskiver” are more light and fluffy.
Directly translated “Æbleskiver” means Apple Slices and probably originates from the 18th century when it was still just apples in flour and eggs fried in a pan in butter. The “modern” version is mentioned in the book “Peters Jul” or “Peters Christmas” from 1866 and later also mentioned in a fairytale by Hans Christian Andersen in 1872.
The “Æbleskiver” was then round, and sometimes still filled with pieces of apple or an apple jam. Today though this is not common, instead you dip them in jam or powdered sugar and enjoy them with hot mulled wine or coffee. They are mostly apart of Danish “Hygge” in the dark winter months, especially around Christmas.
There are many receipts for Danish "Æbleskiver" and usually it's your mothers that have the best :-) Below you will find a video to help you get started!
